Traditional Production Method

In the past, olive oil was produced by leaving the oil-water mixture obtained from crushed olive paste in large tanks to separate naturally. During this settling process, heavier water and sediment moved to the bottom while the oil accumulated at the top.

However, this phase separation could take hours or even days; during that time oxidation increased and quality losses occurred. Manual oil collection and frequent tank cleaning also increased labor requirements and contamination risk.

Modern Production Method

In modern olive oil production, separation is carried out fully automatically throughout the line. The process is designed to separate oil-water-solid phases efficiently without damaging the olive’s structure.
