Wine is a traditional beverage which has been consumed since ancient times. While wine can be produced from a number of fruit, the first raw material comes to the mind is grapes. Produced using primitive methods in the past, wine is produced employing modern technologies today. Quality of the final product depends on a multitude of stages from harvest of the grapes, to selection of proper process equipment, from ambient conditions to process operation conditions and bottling.
Wine is a product obtained by complete or partial fermentation of crushed, whole grape or grape must. Wine contains 87.7% of water, 11% of alcohol, 1% of acid and 0.2% of tannin in average depending on the process and raw material.
Process
Process: Grapes delivered to the plant are subjected preliminary processes such as stalk removal, rupturing and crushing. Then the obtained grape juice-pulp mixture is separated into solid-liquid phased by HAUS DDF decanters. Grape juice output from the decanters are taken to the fermentation tanks and introduced to the wine formation process through addition of yeast. The produced wine is cleaned and cleared using HAUS FBA series separators. Decanters and separators are employed in the following stages of winemaking process:Grape pressing process
Thermovinification process
Post maceration sediment removal
Floatation / fermentation products removal
Vessel bottom sediment removal process
Wine stabilization processes
Cleaning of sediment upon pressing
Champagne Production
Tartrate removal processes
